Butter Chicken Recipe

Butter Chicken - Zest Byron BayServes: 4-6
Prep Time: 5 minutes
Cook Time: 1½ hours approx

Ingredients

175g Zest Butter Chicken
1 kg of skinless chicken thighs
1 onion diced (brown)
½ cup stock or water (optional)
2 tbs oil
2 bay leaves
1 tsp chilli flakes (optional)
100g tomato paste
3 tbs almond meal or ground nuts
3-4 tbs plain yogurt or sour cream

Method

Cut meat into chunks & marinade with Zest Butter Chicken Blend for 1 hour in the fridge (optional). In a heavy based pot and cook diced onions until soft add meat and cook on high for 2 mins. Add tomato paste, almond meal and stock and stir well. Cook on high for five mins, then simmer for 15 mins with lid on or until tender, stir in the yogurt or sour cream and simmer for 5 mins. Reduce sauce if necessary.
Serve with rice and accompaniments

For SLOW COOKERS add all ingredients to slow cooker, on low for 6 – 8 hours. Serve with rice and accompaniments.

  2. Absolutely love this; no nasty ingredients and beautiful flavours. Such an easy slow cooker meal for midweek, but can also be fancied up for the weekend.

      Did you have to add another more liquid due to Slow Cooking? I am keen to try this using my slow cooker!

      1. Hi Elouise, its really up to you in general its worth following the recipe on the back but if you feel you need to add some more water or stock another 1/2 cup of liquid wont hurt.   4. Anyone find this to be too sour after adding the sour cream? I did 3 tbs and found it to be over powering… Maybe cooking cream might have a better result.

  5. Hi the recipe on your website differs to that on the pack. Website includes stock and packet doesn’t. Which is it?

  6. A friend made this for a potluck dinner about a year ago, she added a can of lychees (which raised my eyebrows, but it actually worked really well) and I never forgot about it! I finally made it last night, but did add about 2tb of stevia because I didn’t have a can of lychees like my friend, and I like my curry a little bit sweet – it was delicious!
    My hubby wasn’t hungry, but I gave him a bite off my plate to try and he kept on eating more lol, kept commenting how good it was. It’s definitely a kitchen staple now!
    I also cooked the tomato paste after the onions, but before adding the chicken, just to add a bit more umami to the dish.
