Makes 4 large cakes
2 tsp Zest Indian Spice Paste
1 large white sweet potato
1/4 small cauliflower cut into small florets
3 shallots sliced finely
1 handful basil leaves, finely sliced
1/4 polenta for coating
Peel the sweet potato and boil whole until almost cooked, then add the cauliflower and cook until quite soft. Strain and cool slightly. Grate sweet potato into a bowl and add the other ingredients. Season with Zest Indian Spice Paste. and shape into small cakes. Roll in polenta and set in fridge for ten minutes. Shallow fry until both sides are golden brown. Serve with crisp green salad and minted yoghurt.

Zest Nepalese Spice Paste. Add mixture of root vegetables, fresh tomatoes and stock. Simmer. Throw in some greens. Add splash of cream or yogurt, fresh coriander leaf and chopped chilli.
Brown sliced onion then stir through
Zest Moroccan Spice Paste to mince, onions, parsley, breadcrumbs, egg yolk. BBQ.
Mix Zest Moroccan Spice Paste with sour cream to taste.
Zest Sri Lankan Spice Paste with 2/3 tin coconut cream, add fish and set aside for 30 minutes.
Whisk 3 tbls
Lightly cook thinkly sliced sweet potato, add fish marinade, green beans. Cook through.
Zest Nepalese Spice Paste with 1 tsp olive oil and half lemon juice. Stir through 1/2 cup plain couscous and some currants.
Mix 1 tsp
Add half cup boiling water, cover with plastic wrap for 10 minutes. Gently fork through.
Add roast sweet potato, toasted pine nuts and chopped fresh coriander & mint.
Zest Sri Lankan Spice Paste. Wrap in foil or banana leaves. Chill for minimum 1 hour and BBQ or bake.
Smother whole cleaned fresh fish with
Zest Nepalese Spice Paste on chicken or tofu, then pan fry or bake.
Zest Marinade with sour cream, yogurt, hummus or tahini & serve with carrots, celery, bread or crackers.
Mix your favourite
Zest Indian Spice. Roast in hot oven until soft. Add pepitas and roast for another 3 minutes. Cool. Add crumbled goat’s cheese.
Toss chunks of pumpkin through oil and sprinkle generously with
Mix Zest Sri Lankan Spice Paste into rice before cooking.
