Serves: 4
Prep Time: 20 minutes

Ingredients
MARINADE
2 tbls Zest Sri Lankan Spice Paste
1 clove garlic
1 small knob ginger
1 long red chilli
1 tbls fish sauce
1 tbls lime juice
2 tsp raw sugar

12 scallops roe off, scored on one side
juice of a lime
coriander flowers
sea salt
vegetable oil

Method
Pound marinade ingredients in mortar and pestle to make a paste. Marinate scallops and refrigerate for 2 hours.

Heat pan and lightly oil. Sear scallops score side down and cook for 1 minute on each side depending on size. Remove from pan and rest for 30 seconds. Whilst resting, squeeze lime juice into pan to thin out marinade.

Serve each scallop on top of a teaspoon of marinade. Season with a little salt and top with coriander flower.

Indian Marinara Pie Recipe

The weather is warming up and so are our appetites for flavors that fill your kitchen and your bellies with goodness. 🌞

You only need a few ingredients and our Indian spice paste to bring the flavor.
This is totally family friendly and will pretty much suit all appetites. 🍴✨🥧

lunch, brunch or cooking for friends, this is super yummy, so if your needing to whip something up, this is your answer.

Made in Byron Bay hinterland with fresh and local ingredients -
Turmeric 🍠
Cumin 🌰
Coriander seed 🌿

See below for the full recipe ⬇️

Serves 4-6

Ingredients
300g firm white fish
200g salmon/ocean trout
1 tbs Zest Indian Spice Paste
4 large potatoes, peeled and diced
2 hard-boiled free-range eggs, quartered
1 leek (white part diced finely)
Handful baby spinach coarsely chopped
Handful chopped parsley
300ml pure cream
Extra virgin olive oil

Method
Heat oven to 230°C.

Cook potatoes in salted water until just tender and mash with 1 tbs Olive Oil and seasoning.

Sweat the leeks in olive oil until soft, then add the cream, the Zest Indian Spice Paste and combine well. Take off the heat and stir in the spinach, parsley, fish and eggs.

Pour this mixture into a baking dish and top with the mash.

Bake for 25-30 or until the top is lovely, golden and crisp.

Serve with some yummy buttered peas and beans.

"Imam Bayildi" roughly translates to "the preist fainted"
Upon tasting this dish, a priest swooned from the flavor. The other is that he fainted at the expense of all the olive oil used to make the dish!!!🫒🛢️

Either way, its definatly a nod to how good this dish tastes!!!!👌👌🏾

Just follow the recipe below and add Zest Nepalese Spice Paste, and lets see if any of your loved ones start dropping at the dinner table from the wonderful flavour this recipe brings. 😂😋.

Perfect cooking for this colder weather and a perfect dish to bring to the table at any gathering.

Serves: 4-6
Prep Time: 15-20 minutes
Cook Time: 2½ hours

Ingredients
3 small eggplants
2 brown onions
½ bulb garlic
300-400ml olive oil
3 tbs Zest Nepalese Spice Paste
60ml pomegranate molasses
1½ tbs tomato paste
1½ tbs salt
1 tsp brown sugar
handful parsley
handful mint
handful coriander
handful basil

Method
Pre heat oven to 120°C.

Cut eggplants in half lengthways and with a small knife, carefully remove most of the flesh leaving an eggplant boat waiting to be filled. Set aside the flesh. Rub inside with salt and leave to drain while you prepare the filling.

In a heavy based pot, sweat the onions in a little oil until sweet. Add eggplant flesh, garlic and cook out. Add tomato paste, Zest Nepalese Spice Paste, sugar & molasses, set aside to cool.

Chop fresh herbs and mix in about half.

Rinse softened eggplant boats, pat dry and stuff generously with filling.

Squeeze together in an oven proof dish, cover base with oil and cover dish with lid or foil and bake for approximately 2 hours or until the eggplant is soft.

Bangin’ Barley, Mushroom & Kale Rendang Pies Recipe
Makes 1 family size, 4 lge or 6 sml pies

Ingredients
Mushroom Stock
150g button mushrooms sliced
20g dried shitake mushrooms
2 cloves garlic
1 lt veg stock
1 tbs light soy sauce

Vegetarian Pate Brisee (pastry)
1½ cups plain flour
¼ tsp salt
Pinch sugar
90g cubed chilled unsalted butter
30g cubed chilled veg shortening
4 tbs cold water (more if needed)

Filling
¾ cup barley
20g butter
250g button mushrooms quartered
½ bunch kale sliced
½ cup Zest Rendang Blend
Pinch plain flour
1 egg yolk with 2 tsp milk for sealing & glazing

Method
For the stock, sauté the mushrooms & garlic in a little oil, then add veg stock and gently simmer for 30 mins.

For the Pate Brisee, in a food processor, pulse the dry ingredients until combined. Then add the butter and shortening and pulse until it appears like breadcrumbs. Add water gradually until the pastry comes together. Cover in a bowl and refrigerate for 1 hour.

Cook barley in plenty of water for 30mins, strain and refrigerate.

In a pan wilt kale & set aside. Sauté mushrooms in butter until just coloured. Add pinch of flour and stir until cooked.

To the mushrooms, add barley, kale, Rendang blend and stir. Add enough mushroom stock & stir to create your preferred consistency. Cool.

Roll out pastry, line pies moulds and cut out tops.

Fill and add tops, sealing with the egg wash.

Glaze tops and cook pies until deeply golden for 25-35 mins @ 200°C.

🥟 Vindaloo Spiked Cornish Pasties Recipe🥟
Makes 4 Pasties

INGREDIENTS
Vindaloo Spiked Cornish Pasties - Zest Byron Bay
Short crust pastry
450g plain flour
2 tsp baking powder
1 tsp salt
125g unsalted butter
2 egg yolks
125ml cold water

Filling
1 large brown onion
1 cup pumpkin
½ cup sweet potato
½ cup potato
½ cup peas
175g Zest Vindaloo Blend

1 egg yolk mixed with 1 tsp milk for egg-wash

METHOD
For pastry, blitz flour, baking powder, salt, butter and yolks until mixture forms crumbs. Then slowly add enough water until the mixture comes together in a ball. Chill in a covered bowl for 1 hour.

For the filling, chop all ingredients into 1cm cubes and mix with the Vindaloo Blend. Let this mix sit until the pastry is rested.

Roll out pastry until about 4-5mm thick and using a 20cm diameter side plate as a guide, cut out 4 circles.

Put about ¾ cup of filling mixture in the centre of each pastry round and fold in half, sealing with egg wash. Twist the joined edges for a genuine ‘pasty look’ and glaze with the remaining egg-wash.

Make a little steam hole at the centre of each pasty and bake for 50 minutes at 180°C.

Serves 4

INGREDIENTS
4 free-range chicken breasts
175g Zest Kerala Blend
1 cup Japanese (panko) breadcrumbs
4 tbs sunflower/peanut Oil
4 crusty bread rolls

Coleslaw
1 cup finely shredded red cabbage
½ cup finely shredded white cabbage
½ cup finely shredded carrot
¼ cup flat-leafed parsley
2-3 tbs whole egg mayonnaise
½ lemon juiced
Salt and Pepper

METHOD
To “butterfly” chicken: place breast on cutting board. With one hand lying flat on top of it and using a sharp knife in the other, slice to cut from the long side almost all of the way through, leaving a ‘hinge’. Open like a book and press down flat. Hammer with a meat mallet if you want a thinner schnitzel. Repeat with other 3 breasts.

In a bowl, marinate the chicken in Kerala Blend for at least 2 hours, covered, in the fridge.

Once marinated, put breadcrumbs into a large bowl. Drain excess marinade from each breast and then push well into breadcrumbs, turning to coat evenly.

Put on a plate in the fridge for 30 minutes for the crumb to set.

In a large frying pan, heat the oil to about 170°C and fry the schnitzels for about 5-8 minutes on each side or until golden and the chicken is cooked through. Drain on kitchen paper.

For Coleslaw: mix all of the ingredients in a large bowl and season to your liking.

Warm rolls if you like, cut open and fill with crispy schnitzel and crunchy coleslaw.

Ingredients:

175g Zest Massaman Blend
1kg chicken Marylands
2 tbs veg oil
400g potatoes, peeled & chunked
400ml coconut milk
2 tbs fish sauce (optional)
1 tbs palm sugar (optional)
70g unsalted peanuts, roasted

Method:

Cut the Marylands into two through the joint.
In a heavy-based pot, heat the oil and brown chicken pieces. Add Massaman Blend to the chicken and fry for 3 minutes.
Add the remaining ingredients and simmer with the lid off for about 45 minutes, until the chicken is almost falling off the bone.

🍚 Serve with coconut rice, roti, and a refreshing cucumber, bean, and bean sprout salad.
